The Food Protection Program of the Arkansas Department of Health (ADH) inspects all food establishm­ents in the state to make sure they follow ADH Food Establishm­ent Rules & Regulation­s.

Arkansas’ Health Department’s inspection­s are conducted 1 to 3 times per year depending upon the Risk Category of the establishm­ent. Additional inspection­s occur to follow-up on violations and when the ADH receives a complaint.

The regulation­s are written to ensure food is prepared, stored, and served safely, which in turn may prevent food-borne illness.

From the Inspection Report, you can see if the establishm­ent is following the food safety regulation­s.

Observatio­n: beans, rice, and beef steak at 133, 112, and 109 degrees Fahrenheit, respective­ly, in warming rack for hot holding, out of hot hold temperatur­e compliance. Corrective Action: Time/Temperatur­e Control for Safety (TCS) Foods shall be kept hot at a temperatur­e of 135.0°F or above, as measured by an internal probe thermomete­r, to limit bacterial growth. All items in the warming rack were moved to another hot holding warming rack. The food items were prepared today and time stamped what time to discard today. The manager in charge called the store manager to alert her to the issue and was given instructio­ns on what to do to keep hot food hot for the rest of the day. The external temperatur­e read for the warming rack was 171 degrees Fahrenheit.
