Meow-riffic Kitty Cat Quesadillas
1 cup baby spinach
1⁄2 cup cooked shredded chicken
1⁄2 cup shredded Monterey Jack cheese
2 (10") whole-wheat tortillas
1 English cucumber
1⁄2 red bell pepper
1 slice mild cheddar cheese
1 black olive, quartered
1 In bowl, mix first 3 ingredients. Divide evenly between tortillas; fold in half to form quesadillas. In skillet over medium-high heat, cook 3 min. per side or until cheese is melted.
2 Meanwhile, cut 4 round slices from cucumber. With julienne peeler, cut 16 long, thin strips from remaining cucumber. Cut 4 small circles from remaining cucumber. Cut 4 large triangles and 4 small triangles from bell pepper. Cut 4 large triangles from cheddar slice.
3 To assemble, place 2 cucumber rounds on bottom of each quesadilla to create cheeks. Arrange 3 cucumber strips over each for whiskers. Place small cucumber rounds above cheeks for eyes; top each with a black olive quarter for irises. Cut remaining cucumber strips into 3 pieces; arrange around eyes for lashes. Use small pepper triangles to create nose and mouth. Place cheese triangles above quesadilla for ears. Place 2 large pepper triangles below an ear for bow.
