Crispy Oven-Baked Fries

Boiling fries before baking ensures creamy centers and extra-crispy outsides
2 lbs. russet potatoes, peeled and
sliced into 1⁄2"-thick matchsticks
1 Heat oven to 450°F. In pot over high heat, bring 6 cups salted water to a boil.
Add potatoes; cook 4 min. Drain; set on paper towels to dry. Dry pot.
2 Return fries to pot, cover and shake to rough up edges. Spread on rimmed
