Roasted Beet Salad with Orange Vinaigrette

For even quicker prep, use 1 (15 oz.) can drained mandarin oranges; toss in 1⁄ cup prepared orange vinaigrette

2 navel oranges
1 Tbs. chopped scallions
2 tsp. honey mustard
4 Tbs. olive oil
2 Tbs. red wine vinegar
6 cups baby salad greens
1 (8 oz.) pkg. roasted beets, sliced 1⁄4 cup sliced red onions
1 Zest 1 orange. Over bowl, segment oranges, collecting juices; set aside segments. In bowl, whisk juice, 2 tsp. zest and next 4 ingredients. Add segments, greens, beets and onions; toss to coat.
