Thyme- Scallion Sweet Potato Mash

1 Prick potatoes several times with knife; place on microwave-safe pie plate. Cover with damp paper towel. Microwave 12 min. or until tender, turning 3 times. Let sit 5 min. to cool; peel potatoes.
