Farmers Market Peach Salad

4 peaches, halved and

pitted 1 Tbs. dried oregano 1 shallot, minced

1 clove garlic, minced

2 Tbs. balsamic vinegar

1⁄4 cup olive oil

6 cups mixed greens 4 tomatoes, diced

2 Tbs. chopped fresh basil 4 oz. ricotta salata or feta

cheese, crumbled

1⁄2 cup popped amaranth

1⁄4 cup cooked bacon

crumbles For a twist sure to satisfy the meat lovers at your table, top each salad with 4 oz. of grilled and sliced flank or skirt steak

Heat grill for indirect cooking. Grill peach halves 5 min. or until starting to brown, turning once. In bowl, whisk together next 5 ingredient­s and salt and pepper to taste until smooth.

In large bowl, toss greens, tomatoes, basil, cheese, amaranth and bacon with dressing to coat; divide among 4 plates. Top each with 2 grilled peach halves.
