Tangy Summer Squash Ribbon Salad

1 medium zucchini
1 medium yellow squash 3 large carrots, peeled
1 large shallot, peeled and finely
chopped
2 Tbs. olive oil
1 Tbs. white wine vinegar 1 tsp. Dijon mustard
1 Using wide vegetable peeler, thinly slice zucchini, squash and carrots into long, thin ribbons. In bowl, whisk together remaining ingredients. Add vegetables to dressing; toss gently to coat.
