“I love cooling off with fresh, fruity salads like this one on balmy summer days,” says Alyssa Rosenthal, FIRST associate editor. “To make, I slice five strawberries and put them on a plate with a large handful of sweet baby lettuce and three or four chunks of creamy burrata cheese. For additional crunch, I toss on some chopped pistachios and bits of freeze-dried strawberries. Then I add a drizzle of extra-virgin olive oil to allow the flavors to shine through. It’s the perfect light lunch!”
