Honey- Currant Yogurt Popsicles

1⁄4 cup sugar

2 cups plain yogurt

1⁄2 tsp. vanilla extract

1 cup fresh or frozen red currants (or raspberrie­s) 1 frozen banana

1⁄4 cup honey In small pan, bring sugar and 1⁄4 cup water to a boil; cook 5 to 8 min. or until sugar dissolves. Chill 30 min. In blender, puree remaining ingredient­s and cooled simple syrup until smooth. Divide mixture evenly among six 3 oz. wax-coated paper drinking cups. Cover cups with foil; make slit in centers and insert 1 Popsicle stick. Freeze 4 to 5 hrs. Peel away foil and cups before serving.
