Zesty Car­rot- Ginger Soup

Adding a dol­lop of cream just be­fore serv­ing gives this starter party-pretty swirls

1 onion, diced

3 Tbs. minced fresh ginger

2 Tbs. olive oil

2 lbs. car­rots, peeled and chopped 1 qt. veg­etable stock

1 (8 oz.) tub sour cream

1⁄2 tsp. chili pow­der

1 lime, zested and juiced

1 In pot over medium heat, cook onions and ginger in oil 5 min. Add car­rots and stock; bring to a boil. Let sim­mer 35 min. Sea­son to taste. Trans­fer to blender in batches; puree.

2 In bowl, mix cream, chili, 1 tsp. lime juice and 1⁄2 tsp. zest. Driz­zle into soup.

Pre­fer to make in a slow cooker? Com­bine oil, onions, ginger, car­rots and stock. Cover; cook on high 6 hrs. Puree; top with cream mix­ture.
