Zesty Carrot- Ginger Soup
ACTIVE TIME: 10 min. TOTAL TIME: 50 min. SERVES: 6
Adding a dollop of cream just before serving gives this starter party-pretty swirls
1 onion, diced
3 Tbs. minced fresh ginger
2 Tbs. olive oil
2 lbs. carrots, peeled and chopped 1 qt. vegetable stock
1 (8 oz.) tub sour cream
1⁄2 tsp. chili powder
1 lime, zested and juiced
1 In pot over medium heat, cook onions and ginger in oil 5 min. Add carrots and stock; bring to a boil. Let simmer 35 min. Season to taste. Transfer to blender in batches; puree.
2 In bowl, mix cream, chili, 1 tsp. lime juice and 1⁄2 tsp. zest. Drizzle into soup.
Prefer to make in a slow cooker? Combine oil, onions, ginger, carrots and stock. Cover; cook on high 6 hrs. Puree; top with cream mixture.
