Apple- Cranberry Cheesecake Crumb Bars
ACTIVE TIME: 20 min. TOTAL TIME: 4 hrs. SERVES: 16
Bursting with seasonal fruit, butterysweet crumbles and a creamy filling, these bars are sure to spread smiles
2 sticks butter
11⁄2 cups brown sugar
4 eggs, at room temp. and divided
4 cups flour
1 tsp. baking powder
16 oz. mascarpone, at room temp.
1 (14 oz.) can sweetened
condensed milk
2 Granny Smith apples, peeled
and diced
2 cups fresh or frozen cranberries
1 Heat oven to 350°F. Using electric mixer on medium speed, cream butter and sugar. Add 1 egg. Beat in flour and baking powder. Press half of dough into 9" x 13" dish lined with parchment.
2 Using electric mixer on medium speed, beat mascarpone, condensed milk and remaining eggs 5 min. Pour on top of crust. Bake 30 min.
3 Sprinkle half the remaining dough in crumbs over filling. Add apples and cranberries; sprinkle with remaining dough crumbs. Cover with foil; bake 30 min. Uncover; bake 15 min. more Chill 2 hrs. before cutting into squares.
