Ap­ple- Cran­berry Cheese­cake Crumb Bars

Burst­ing with sea­sonal fruit, but­terysweet crum­bles and a creamy fill­ing, these bars are sure to spread smiles

2 sticks but­ter

11⁄2 cups brown sugar

4 eggs, at room temp. and di­vided

4 cups flour

1 tsp. bak­ing pow­der

16 oz. mas­car­pone, at room temp.

1 (14 oz.) can sweet­ened

con­densed milk

2 Granny Smith ap­ples, peeled

and diced

2 cups fresh or frozen cran­ber­ries

1 Heat oven to 350°F. Us­ing elec­tric mixer on medium speed, cream but­ter and sugar. Add 1 egg. Beat in flour and bak­ing pow­der. Press half of dough into 9" x 13" dish lined with parch­ment.

2 Us­ing elec­tric mixer on medium speed, beat mas­car­pone, con­densed milk and re­main­ing eggs 5 min. Pour on top of crust. Bake 30 min.

3 Sprin­kle half the re­main­ing dough in crumbs over fill­ing. Add ap­ples and cran­ber­ries; sprin­kle with re­main­ing dough crumbs. Cover with foil; bake 30 min. Un­cover; bake 15 min. more Chill 2 hrs. be­fore cut­ting into squares.
