Sweet & Sour Meat­balls

1 onion, diced

4 cloves gar­lic

1⁄4 cup olive oil, di­vided

2 lbs. ground beef 1⁄4 cup minced fresh pars­ley

1 cup no-sugar-added

apri­cot pre­serves

1⁄2 cup ketchup

1⁄4 cup rice vine­gar 1 tsp. red chili flakes To trans­form these de­lec­ta­ble party bites into a hearty and healthy din­ner, serve them over a bed of cooked bas­mati white rice

In pan over medium-high heat, cook onions and gar­lic in 2 Tbs. oil 5 min. Trans­fer to bowl; mix in ground beef, pars­ley and salt and pep­per to taste.

In pan over medium-high heat, brown meat­balls in re­main­ing oil on all sides. Trans­fer to slow cooker. Add re­main­ing in­gre­di­ents to slow cooker; stir well. Cover; cook on high 3 to 4 hrs.
