Chicken Let­tuce Wraps

2 lbs. bone­less skin­less chicken breasts, cut into chunks 1⁄2 cup co­conut flour 1 tsp. gar­lic pow­der 1 tsp. onion pow­der 1⁄4 cup canola oil 1⁄4 cup co­conut aminos 1⁄2 cup co­conut milk 1⁄4 cup brown sugar 2 limes, zested and juiced 12 leaves but­ter let­tuce Sea­soned co­conut flour cre­ates a light, crunchy bread­ing that’s de­li­ciously gluten­free, but all-pur­pose flour can be used too

In bowl, toss chicken with next 3 in­gre­di­ents; sea­son with salt and pep­per. In skil­let over medium-high heat, brown chicken in oil. Trans­fer to slow cooker.

Add aminos, co­conut milk, brown sugar, 2 Tbs. lime juice and 1 tsp. lime zest to slow cooker; stir well. Cover; cook on low 5 to 6 hrs. Serve in let­tuce leaves. Gar­nish as de­sired.
