In­stead of wheat buns, we serve our mini burg­ers (or other pro­teins) on seeded tomato halves—they have a tooth­some tex­ture and sub­tle sweet­ness that lets the umami fla­vors of the meat shine. To do: Slice each medium tomato in half hor­i­zon­tally, then gen­tly squeeze the seeds and juice out of each half. Layer the meat and fix­ings be­tween the “buns” and en­joy guilt-free!
