Instead of wheat buns, we serve our mini burgers (or other proteins) on seeded tomato halves—they have a toothsome texture and subtle sweetness that lets the umami flavors of the meat shine. To do: Slice each medium tomato in half horizontally, then gently squeeze the seeds and juice out of each half. Layer the meat and fixings between the “buns” and enjoy guilt-free!
