Lemon-Garlic Shrimp Scampi

GLUTEN-FREE DAIRY-FREE 3 Tbs. olive oil

6 cloves garlic, thinly sliced 1⁄4 cup white wine 4 lemons, zested and juiced 1⁄2 cup low-sodium

vegetable stock

1 lb. shrimp, cleaned

2 Tbs. chopped parsley Serve this protein-rich dish over sautéed zucchini noodles or cauliflowe­r rice to soak up the buttery white wine sauce

In skillet over medium-high heat, heat oil. Add garlic; cook 2 min.

Add white wine, 1⁄4 cup lemon juice, 1 tsp. lemon zest and vegetable stock. Bring to a boil; reduce heat to medium-low and let simmer 5 min.

Add shrimp; cook 5 min. or until pink, stirring occasional­ly. Season to taste with salt and pepper. Sprinkle with parsley before serving.
