While this dish can be made with shell-on shrimp, re­mov­ing the outer shells be­fore cook­ing al­lows the sauce to soak into the meat— and kitchen shears make quick work of the task. To do: Sim­ply slide the scis­sor blade in be­tween the shell and the thick part of the meat, then cut to­ward the tail, lift­ing the vein as you go.
