Chili- Cheese Stuffed Sweet Pota­toes

2 large sweet pota­toes

2 Tbs. olive oil, di­vided

1 red onion, sliced

1 lb. ground beef

1 tsp. ground cu­min

1 lime, juiced

1⁄2 cup shred­ded ched­dar cheese

Heat oven to 400°F. Slice pota­toes in half length­wise. Ar­range cut side up on bak­ing sheet. Driz­zle with 1 Tbs. oil. Bake 30 min. Scoop a small cav­ity out of each. In pan over medium-high heat, cook onions and beef in 1 Tbs. oil un­til browned. Add cu­min and 2 Tbs. lime juice. Spoon mix­ture into pota­toes. Sprin­kle with cheese; bake 5 min.
