Shamrock pudding parfaits

Your little leprechaun­s will feel extra lucky when you serve up these trifles that are packed with energizing fats and choline from egg yolks

St. Patrick’s Day Shamrock Parfaits

3⁄4 cup pistachios

3⁄4 cup sugar 4 egg yolks 1 Tbs. vanilla extract 3 cups milk 3 Tbs. cornstarch

Green food coloring

1 (9 oz.) pkg. chocolate wafers 2 cups whipped cream

1 In food processor, pulse pistachios until finely ground. In bowl, whisk next 3 ingredient­s.

2 In saucepan over medium-high heat, combine milk and ground pistachios; bring to a simmer. Once simmering, carefully ladle 1⁄4 cup milk mixture into yolk mixture to temper, whisking continuous­ly. Whisk in another 1⁄4 cup milk mixture, then add to pot. Bring mixture to a boil, whisking constantly. Reduce heat to low; whisk in cornstarch. Tint with food coloring to desired hue. Refrigerat­e at least 1 hr.

3 In food processor, pulse wafers until crumbly. In each of 6 Mason jars, layer chocolate crumbs, pudding and whipped cream. Repeat layers; finish with chocolate crumbs on top.
