America-the-Beautiful Berry Sheet Cake

6 cups flour

1 Tbs. baking powder

3 cups granulated sugar 8 eggs

11⁄2 cups vegetable oil

2 cups, plus 2 Tbs. buttermilk,

divided

3 Tbs. vanilla extract, divided

2 lbs. strawberri­es, hulled and

quartered 1 cup raspberrie­s 1 cup blueberrie­s 1 Tbs. honey 1 lemon, zested and juiced 21⁄2 sticks butter, at room temp. 11⁄4 cups powdered sugar, sifted

8 oz. white chocolate, melted

1 Heat oven to 350°F. In mixer bowl, mix flour, baking powder and a pinch of salt. Add granulated sugar, eggs, oil, 2 cups buttermilk and 2 Tbs. vanilla extract. With mixer on medium speed, beat 2 min. Divide batter between 2 greased and lined 13" x 18" baking sheets; bake 25 min. Let cool; unmold.

2 In large bowl, toss berries, honey, 2 Tbs. lemon juice and 1 tsp. lemon zest; let sit 30 min. In clean bowl with mixer on medium-high speed, beat remaining ingredient­s 3 min. or until fluffy.

3 Use template below to cut out USA map shape from cake layers as directed, reserving a 2" square piece. With 2" heart cutter, punch out a heart from reserved cake. Frost first cake layer with half the frosting. Top with second cake layer; spread with remaining frosting. Spoon berries over cake just before serving. Place cake heart where desired.
