“Whether it’s a potluck or a weekend supper, brownies are my go-to dessert,” says Nicole Aber, FIRST associate food editor. “For Halloween, I give boxed brownie mix a festive twist by adding a pumpkin cheesecake layer. First, I mix the brownie batter and set it aside. For the pumpkin layer, I beat 8 oz. of cream cheese, 1⁄ cup
2 of heavy cream, 1⁄ cup of pumpkin
2 puree and 1 tsp. of pumpkin pie spice with an electric mixer. I pour 3 ⁄4 of the brownie batter into a lined 8" square dish, top with the pumpkin mix and swirl the rest of the batter on top. I bake at 350°F for 30 minutes, pop them in the fridge to chill for 4 hours, then slice and serve—yum!”
