Lime-Kissed Veggie Summer Rolls

8 oz. rice noodles

1⁄4 cup sesame oil

2 limes, juiced

1⁄4 cup fresh cilantro

8 spring-roll rice wrappers

16 oz. cooked shrimp, shelled and chopped 1⁄2 cup finely shredded red cabbage

Place noodles into 2 qts. hot water; let sit 10 min. Remove noodles, reserving water for wrappers. Toss noodles with sesame oil, 1⁄4 cup lime juice and cilantro. One at a time, place rice wrappers in warm reserved water. Let sit 20 seconds. Place on work surface. Place noodles, shrimp and cabbage on each softened wrapper; roll tightly.
