Loaded Zucchini & Corn Quesadilla­s

2 Tbs. olive oil 1⁄2 onion, finely diced 1⁄2 red bell pepper, finely diced 1⁄2 zucchini, finely diced 1⁄2 cup canned black beans, drained and rinsed 1⁄2 cup fresh corn 8 (8") tortillas 1 cup Cheddar cheese 1 cup pepper-Jack cheese

Heat oil in pan over medium-high heat. Add onions, peppers and zucchini; cook 10 min. Stir in beans and corn. Place 4 tortillas on work surface. Sprinkle with half the cheese. Top with vegetables and remaining cheese and tortillas. In skillet over medium heat, cook quesadilla 10 min., turning once. Repeat with remaining quesadilla­s.
