Golden Potato Bake

Layering up our casserole in a skillet guarantees it cooks up crispy

4 oz. Swiss cheese, shredded

2 Tbs. grated Parmesan cheese

2 shallots, thinly sliced

1 Tbs. chopped fresh parsley

1⁄2 tsp. dried herbes de Provence

2 1⁄2 lbs. red potatoes, thinly sliced

2 Tbs. butter

1 Mix first 5 ingredient­s and 1⁄2 tsp. salt; reserve. Toss potatoes with 1⁄4 tsp. salt. In 10" nonstick skillet, melt butter over medium heat. In skillet, arrange 1⁄3 of potato slices in spiral pattern, overlappin­g slightly. Sprinkle with half of cheese mixture. Repeat layers, ending with potatoes. Cover; reduce heat to medium-low. Cook until potatoes are tender, about 50 min.

2 Uncover; cook until bottom has browned, 5–10 min. Remove from heat. Run spatula around edge and under potatoes to loosen. Let cool slightly. Cover with serving plate. Invert potatoes onto plate; remove skillet.
