Three-Cheese Macaroni

8 oz. elbow macaroni
2 Tbs. butter
2 Tbs. all-purpose flour
1 1⁄2 cups milk
1 cup shredded Cheddar cheese
1⁄2 cup grated Parmesan cheese
1⁄2 cup shredded Gruyère cheese
6 Tbs. panko breadcrumbs
Chopped fresh parsley (optional)
1 Heat oven to 400°F. Grease 6 (6 oz.) heatproof bowls or ramekins; reserve. In large pot of salted boiling water, cook macaroni according to package directions. Drain well; reserve.
2 In large pot, melt butter over low heat. Add flour; cook stirring constantly, 30 sec. Stir in milk. Increase heat to medium. Bring to a boil; cook, stirring, 1 min. Add Cheddar, Parmesan and Gruyère; cook, stirring, until melted. Remove from heat; stir in macaroni. Season to taste with salt and pepper. Divide among ramekins; top with breadcrumbs. Bake until golden, about 15 min. If desired, broil, then serve sprinkled with chopped parsley, if using.
