Cauliflowe­r Mashed Potatoes: Steam 1 head of cauliflowe­r 10 min. or until fork-tender. While cauliflowe­r cooks, heat 2 Tbs. unsalted butter with 3 minced cloves garlic 2 min. or until garlic is fragrant and golden. In a food processor, combine cauliflowe­r, butter mixture, 2 Tbs. cream cheese and 1⁄4 cup Parmesan cheese until smooth. Serves 4

Roasted Brussels Slaw: Preheat oven to 400°F. Thinly slice 24 oz.
