Bacon-Wrapped Tenderloin: Preheat oven to 425°F. Bake 4 slices bacon until cooked but not firm, about 6 min. Brush 1 lb. tenderloin with 1 tsp. melted butter. Season with 11⁄2 Tbs. ranch seasoning. Wrap tenderloin snugly with bacon. Bake for 15 min. (for medium rare loin). Remove and rest for 10 min. In a sauté pan, melt 2 Tbs. butter. Add 8 oz. sliced mushrooms and 1⁄2 cup sliced onion. Season with 1⁄2 tsp. ranch seasoning. Sauté 7 min. Serve pan gravy with tenderloin. Serves 4
Lasagna: Preheat oven to 375°F. Combine 1 egg, 2 cups 4% milkfat cottage cheese, 2 cups mozzarella cheese, 1⁄2 cup Parmesan cheese, 2 Tbs. olive oil and 1⁄4 tsp. salt. Evenly cover bottom of lasagna pan with 1 cup nosugar-added pasta sauce. On top, layer thinly sliced, oven-roasted deli turkey breast, slightly overlapping each piece. Spread half of cheese mixture on top of turkey. Evenly spread half an 18 oz. bag of spinach on top of cheese. Repeat layers again. Then add a layer of pasta sauce and a layer of turkey. Finish with 1 cup mozzarella cheese
