Potato-Tomato Gratin

2 Tbs. plain dry breadcrumb­s

1 (14.5 oz.) can sliced new potatoes, drained

3 plum tomatoes, cut into 1⁄4"-thick slices

1⁄2 tsp. onion powder 3⁄4 cup shredded Swiss cheese (3 oz.)

6 slices cooked bacon Chopped fresh parsley (optional)

Heat oven to 400°F. Coat 91⁄2" (51⁄2 cup) quiche or round baking dish with cooking spray; sprinkle breadcrumb­s over bottom. Fill with alternatin­g potato and tomato slices, arranged in an overlappin­g pattern; sprinkle with onion powder and 1⁄4 tsp. pepper, then cheese. Bake until tomatoes are tender and cheese is lightly browned, 15–20 min. Top with bacon and parsley.
