For her healthier take on meatloaf, dietitian and cookbook author Ellie Krieger uses turkey instead of beef and oats instead of breadcrumb­s. To make: Combine 3⁄4 cup of quick-cook oats and 1⁄2 cup of skim milk. Mix in 2 lbs. of ground turkey breast, 1⁄2 cup of chopped red pepper, 1⁄4 cup of chopped onion, 2 eggs, 2 tsp. of Worcesters­hire sauce, 1⁄4 cup of ketchup and 1⁄2 tsp. of salt. Form into a loaf, then top with 1 (8 oz.) can of tomato sauce.

Bake at 350°F for 1 hour.
