4 oz. baby bella mushrooms, sliced 8 oz. asparagus, steamed, halved 1⁄4 cup thinly sliced red onion

1⁄2 (5.2 oz.) pkg. Boursin cheese Whisk eggs, 1⁄3 cup water and 1⁄4 tsp. salt. In 10" nonstick skillet, heat oil over medium-high heat; add mushrooms. Cook, stirring, until browned, 7–8 min. Stir in asparagus, onion and egg mixture; over medium heat, cook until edges start to set. Cover; over medium-low heat, cook until set, 12–15 min.; top with cheese during last 5 min.
