AppleandcinnamonBircher Maple and Pecan Granola
Serves 2
Ingredients:
100g rolled oats
240ml milk ( plant-based or any milk of your choice) powdered jaggery to taste or you can use maple syrup, agave syrup, honey or a sweetener
1 apples grated with skin on
2 tbsp raisins
1 tsp ground cinnamon
1 tbsp chia seeds a large pinch of saffron
Frozen berries of your choice ( cherries seem to go with the flavour profile of this recipe)
nnnnnnnnnnMethod: In a bowl place all the ingredients except for the apple and stir to mix. Cover with a lid or cling film and place in the refrigerator overnight. Place the frozen berries in a container and leave in the refrigerator to thaw. Then when you are ready to serve this the next morning; add the grated apple along with the berries and stir. If the oats are too thick you can add water or a little extra milk.

Ingredients: n 3 tbsp virgin coconut oil 4 tbsp maple syrup a pinch of sea salt
80g rolled oats
40g pecan nuts
40g mixed seeds
1 egg white

Method: Preheat the oven to 150C. Then in a large bowl mix together the rolled oats, pecan nuts and mixed seeds. In a small saucepan add the coconut oil and maple syrup and warm gently, add the sea salt and give it a good stir before drizzling over the dry mixture. Mix well to ensure that all the dry mixture is coated evenly. Take the egg white and whisk until it becomes light and frothy. Add this to the mixture and stir well. Place this mixture onto a large baking tray and spread evenly but don’t press down. Bake in the preheated oven for approximately 30 – 40 minutes, stirring occasionally. Let it cool down completely before storing in an airtight container.
