Higher cuisine?

Regarding “Crickets make leap in demand as a protein” (Chron.com, Friday), I think this will prove useful during the next major famine. All the hipsters can eat crickets and other assorted bugs while convincing everyone else it is “higher cuisine.”

Meanwhile, I’ll enjoy some beef and pork.
