HEXX Kitchen + Bar at Paris Las Vegas, Corporate Executive Chef Matthew Piekarski and Executive Chef Carlos Buscaglia are ready for autumn with fall menu items and patio dining with prime views of The Fountains at Bellagio and more on the Las Vegas Strip.

Of autumn note on HEXX’s American menu: Steaks, Veal Milanese, seafood and vegetables aplenty, all of which were presented during a recent, over-the-top, family-style dinner for a group of 10. Nobody went home hungry!

That dinner at Hexx on Sept. 13 included Seafood on Ice, Jumbo Lump Crab Cake, Tomato and Burrata Salad, Meats & Cheeses, White Bean Hummus, Crispy Calamari, Greg Norman Australian Prime Wagyu Rib Eye, Veal Milanese, Macaroni & Cheese, Roasted Brussels Sprouts, Roasted Cauliflower, Mushroom Risotto,

Charred Asparagus, Crispy Broccolini, Gnocchi Pomodoro, Vegetarian Pizza and more.

There was no room for dessert, obviously, but it was nonetheless served and sampled — S’Mores Semifreddo, Champagne Shaved Ice, Vanilla Panna Cotta & Cherries, Passion Fruit Mousse, Peanut Butter Cheesecake and Red Velvet Roll — along with fun, signature cocktails called HEXX Potions (Purple Haze, The Elixir and Flamingo Punch, among others).

A delightful brunch at Hexx last Sunday, during which the weather was perfect and NFL jerseys were donned all around, featured a Fresh Fruit Plate, Twisted Sticky Bun, Cinaroll Waffle, HEXX Benedict (with scalloped potatoes deliciously substituting for an English muffin), Chilaquiles, Peanut Butter Cheesecake, Red Velvet Roll and mimosas. Brunch ended with a tasting of chocolates.

HEXX Kitchen + Bar at Paris Las Vegas, which also boasts a bar and lounge, candy store and chocolate factory with tastings, is open 24 hours a day seven days a week.
