The sizzle: Its secret menu offers items such as cheesy tater tots. The name comes from umami, which is known as the savory “fifth taste” in addition to salty, sweet, bitter and sour. Umami means “yummy taste” in Japanese.

The Counter

The sizzle: The concept is built around customizab­le hamburgers. Customers use a form to indicate choices that include eight bun and 27 sauce options ( among them: apricot, sweet Sriracha and cabernet mustard).

The Habit Burger Grill

The sizzle: The chain’s signature is cooking patties over an open f lame. The classic option is the Charburger. It’s another chain with a secret menu. The Habit’s first location was in Goleta, selling burgers for 24 cents each.

Five Guys Burgers and Fries

Headquarte­rs: Lorton, Va. Locations: 1,000+ in the U. S. and Canada

The sizzle: Started by Janie and Jerry Murrell, along with their four sons ( a fifth son was born a few years later). The beef is never frozen, and the fries are hand- cut and cooked in peanut oil.

Smashburge­r

Debut: 2007

Headquarte­rs: Denver Locations: 340+ in California and 34 states, and locations in six other countries

The sizzle: The name describes the chain’s cooking method. The beef used in the burgers starts as meatballs that are then smashed and cooked on a buttered grill.
