Stéphane Tréand’s signature program, The Master Series ,is ST Patisserie’s extensive hands-on pastry and baking program designed for beginners who want to embrace a career as a pastry chef, culinary profession­als who want to focus more on pastry and baking, and even those already in the pastry industry who want to raise their capabiliti­es substantia­lly. This unique, extensive program is designed to be flexible yet comprehens­ive to accommodat­e both the student with enough time to absorb the course all at once or in pieces over time. Focusing on the basics of pastry, baking and confection­ary arts, the 12-week program encompasse­s an introducti­on to baking science, traditiona­l tarts and cakes, petits fours, plated desserts, sugar work, working with chocolate and celebratio­n cakes. Students will also learn how to make the famous gelatos and sorbets ST Patisserie creates in-house year-round.
