Green God­dess Sand­wich

The herby mayo mix­ture in this sand­wich, adapted from Joy the

Baker: Over Easy by Joy Wil­son, takes its cue from clas­sic green god­dess dress­ing. Com­bine ½ cup may­on­naise or Greek yo­gurt, 1 hand­ful fresh basil leaves, 3 Tbsp finely chopped chives, ½ tsp grated lime zest, 2 Tbsp fresh lime juice, 1 small gar­lic clove, sea salt and freshly ground black pep­per in a blender or food pro­ces­sor; blend un­til smooth. Re­frig­er­ate un­til cold. Spread may­on­naise mix­ture evenly on 8 slices whole-grain bread. Slice 1 av­o­cado and dis­trib­ute evenly among 4 bread slices. Top with 4 slices Havarti cheese, 1 thinly sliced English cu­cum­ber, 2 cups baby spinach, 2 cups sprouts, 1 large sliced heir­loom tomato and re­main­ing bread slices. Serves 4.
