Green Goddess Sandwich

The herby mayo mixture in this sandwich, adapted from Joy the

Baker: Over Easy by Joy Wilson, takes its cue from classic green goddess dressing. Combine ½ cup mayonnaise or Greek yogurt, 1 handful fresh basil leaves, 3 Tbsp finely chopped chives, ½ tsp grated lime zest, 2 Tbsp fresh lime juice, 1 small garlic clove, sea salt and freshly ground black pepper in a blender or food processor; blend until smooth. Refrigerat­e until cold. Spread mayonnaise mixture evenly on 8 slices whole-grain bread. Slice 1 avocado and distribute evenly among 4 bread slices. Top with 4 slices Havarti cheese, 1 thinly sliced English cucumber, 2 cups baby spinach, 2 cups sprouts, 1 large sliced heirloom tomato and remaining bread slices. Serves 4.
