New brunch in Tosa
Open about a month, the Hospitality Democracy restaurants at the Mayfair Collection are making some changes.
The group opened its second brick-and-mortar versions of AJ Bombers burger restaurant, Holey Moley Doughnuts + Coffee and Smoke Shack barbecue restaurant in late November at the shopping center, 11340 W. Burleigh St.
Starting Jan. 7, Smoke Shack will begin serving its blues brunch from 10 a.m. to 3 p.m. Saturdays and Sundays, alongside the regular menu. A blues guitarist will play at the brunches, which include plates such as a burntends Benedict with Alabama white sauce and home fries ($13.50) and biscuits and gravy ($9, or $11.50 with added meat, such as pulled pork).
At Holey Moley, afternoon hours have been extended. Instead of closing at 1 p.m. or whenever the doughnuts sell out, Holey Moley is staying open several hours later.
“We try to produce enough doughnuts to stay open until 4 p.m. each day,” said Hospitality Democracy partner Joe Sorge. Production to meet demand in Wauwatosa is up 150% to 200% over Holey Moley’s original Third Ward location, Sorge said; he credits that to the Mayfair Collection’s central location, plentiful nearby parking, the tendency of customers to place orders in advance, and the time of year, when people bring more treats to work or home because of holidays.
And this week, all three restaurants began accepting online orders.
At the new restaurants designed by Flux Design, customers will notice features such as a wall of bicycle handlebars affixed to look like hunting trophies at Smoke Shack, by artist Cory Malchow, and the peanut bombers that drop peanuts in the shell at AJ Bombers. Smoke Shack’s design mimics a quonset hut that was dismantled in Mequon, its parts used in the design.
Note that these restaurants at the Mayfair Collection will be closed Christmas Eve and Christmas. Regular hours are:
