THE SOCIAL MAC AND CHEESE WITH GOAT CHEESE AND ROSEMARY

Ellen Purtell, Elm Grove, requested a recipe from Kevin Sloan, former chef and owner of The Social, who now cooks for the Pabst Theater Group.

She wrote: “I am requesting a recipe from Kevin Sloan, who is head chef for the Pabst Theater Group, creating dishes for the many musicians that play at the Riverside and Pabst theaters.

“Kevin was the former chef and owner of The Social in Walker’s Point, a jewel of a restaurant that is sorely missed. The recipe from The Social that I would dearly treasure is the goat cheese and chicken mac ’n’ cheese. It was extraordin­ary: creamy, savory and scented with rosemary. It was a perfect dish.

“I would love to relive some of those great memories spent with friends at The Social by making this at home if you are able to obtain the recipe. Many thanks to the Journal Sentinel and Chef Kevin Sloan!

Sloan sent the recipe and wrote: “The dish was on the menu for The Social when it opened in October of 2001. Removing it from the menu at any point the nine years The Social was open was not an option, as it certainly was a fan favorite.

“At the time, comfort foods such as mac and cheese hadn’t made a comeback yet. So, we decided to start the process ... the dish fit well with our contempora­ry menu that mixed in Midwest-style comfort dishes.

“Currently, and for the last six years, I’ve been the executive chef for the Pabst Theater group, which means that I cook for the artists who play our theaters before they go on stage.

“On a rare occasion I hearken back to some of the dishes from The Social. … They are dishes like the one here, or the lobster mac and cheese, the warm duck salad and others show up from time to time on my menus.

“The last time I remember doing this particular dish was on the lunch menu for Ringo Starr and his guys when they played the Riverside last year.”
