Homemade Nutri-Grain-Style Bars

Makes 8 servings

1 cup flour

3⁄4 cup old-fashioned rolled oats

1⁄8 teaspoon baking soda 1⁄4 teaspoon cornstarch

1⁄2 teaspoon ground cinnamon

1⁄8 teaspoon salt 6 tablespoon­s coconut oil, at room temperatur­e

2 tablespoon­s plain Greek yogurt

2 tablespoon­s honey 2 egg yolks 1 teaspoon vanilla extract 1⁄2 cup raspberry jam

Prepare a baking pan with parchment paper or a baking pan liner.

In a medium bowl, combine flour, oats, baking soda, cornstarch, cinnamon and salt.

In another medium bowl, combine coconut oil, yogurt and honey. Add egg yolks and vanilla and mix to combine.

Add dry ingredient­s to wet ingredient­s and mix until batter forms a ball. Divide dough into two balls, setting one aside.

Dust work surface with a bit of flour and roll out dough into an 18-by-4-inch rectangle. If your dough is sticking, add a little more flour or put the dough between two pieces of parchment paper.

Cut dough rectangle into 4-by-4 1⁄2-inch rectangles; you should be able to get 4 out of each small ball of dough (to make 8 total bars).

Put a line of jam (1 tablespoon) down the middle of the length of each small rectangle, being careful to leave room at the edge to pinch the dough. Fold the long sides of the dough together over the top of the line of jam, and pinch the ends together to seal it up. Flip the bar over (seam-side down) and pinch any cracked areas.

Place finished bars on your prepared baking sheet. Place the bars in the freezer for 15 minutes to firm up.

Meanwhile, preheat oven to 350 degrees.

Remove bars from freezer and bake 20 minutes, or until edges begin to brown slightly. Let cool completely on a wire rack before serving. Store at room temperatur­e.
