Irish Cream Ice Cream
Makes 4 servings
1 1⁄2 cups half-and-half cream
1⁄2 teaspoon vanilla extract
1⁄2 cup Irish cream liqueur
8 egg yolks
1⁄3 cup sugar
In a medium saucepan, bring the half-and-half, vanilla and Irish cream to a simmer over medium-low heat.
While liquid is heating up, place yolks and sugar in a bowl. Vigorously whisk together.
When cream begins to simmer, turn heat down to low and ladle about half the liquid into the yolks while whisking. Pour yolk mixture back into saucepan, using a spatula to scrape the bowl.
With heat on low, stir mixture for several minutes until sauce has slightly thickened. Remove from heat and allow to cool 5 minutes.
Pour mixture through a fine-mesh sieve into a large bowl and cover with plastic wrap, gently pressing plastic directly against ice cream base to prevent a skin from forming. Chill several hours or overnight.
Prepare in an ice cream maker according to manufacturer’s instructions.
