Christmas Morning Cinnamon Rolls

Makes 24

2 1⁄2 cups flour

1⁄2 teaspoon baking powder

1⁄4 teaspoon salt

1 cup (2 sticks) butter, room temperatur­e

3⁄4 cup granulated sugar

1 egg

2 teaspoons vanilla extract Filling:

1⁄4 cup granulated sugar 2 tablespoon­s ground cinnamon

2 tablespoon­s vanilla extract

2 tablespoon­s butter, melted Icing:

1 cup powdered sugar

3 tablespoon­s milk

1⁄2 teaspoon vanilla extract

Ground cinnamon

In whisk a mixing flour, bowl, baking powder and salt.

In a large bowl, using electric mixer, beat butter until creamy. Add sugar and mix well. Add egg and vanilla extract until combined. Add dry ingredient­s to wet and beat until combined.

Divide dough into two equal parts. Roll out each portion out on a silicone mat or lightly floured surface into a square that is 1⁄4 inch thick about 10 by 10 inches.

Make filling: In a bowl, combine sugar, cinnamon and vanilla extract. Mix well. Use a brush to spread melted butter onto each square of dough. Sprinkle on the cinnamon-sugar-vanilla mixture. Roll up each dough square into a log shape. Refrigerat­e 1 hour.

Preheat oven to 350 degrees.

Remove logs from refrigerat­or and cut into 1⁄2-inch slices. Place slices on baking sheet and bake in preheated oven 12 minutes. Remove to racks to cool. Make icing: Whisk sugar, milk and vanilla together. Drizzle icing onto cooled cookies. Sprinkle each with a pinch of cinnamon.
