Christmas Morning Cinnamon Rolls
Makes 24
2 1⁄2 cups flour
1⁄2 teaspoon baking powder
1⁄4 teaspoon salt
1 cup (2 sticks) butter, room temperature
3⁄4 cup granulated sugar
1 egg
2 teaspoons vanilla extract Filling:
1⁄4 cup granulated sugar 2 tablespoons ground cinnamon
2 tablespoons vanilla extract
2 tablespoons butter, melted Icing:
1 cup powdered sugar
3 tablespoons milk
1⁄2 teaspoon vanilla extract
Ground cinnamon
In whisk a mixing flour, bowl, baking powder and salt.
In a large bowl, using electric mixer, beat butter until creamy. Add sugar and mix well. Add egg and vanilla extract until combined. Add dry ingredients to wet and beat until combined.
Divide dough into two equal parts. Roll out each portion out on a silicone mat or lightly floured surface into a square that is 1⁄4 inch thick about 10 by 10 inches.
Make filling: In a bowl, combine sugar, cinnamon and vanilla extract. Mix well. Use a brush to spread melted butter onto each square of dough. Sprinkle on the cinnamon-sugar-vanilla mixture. Roll up each dough square into a log shape. Refrigerate 1 hour.
Preheat oven to 350 degrees.
Remove logs from refrigerator and cut into 1⁄2-inch slices. Place slices on baking sheet and bake in preheated oven 12 minutes. Remove to racks to cool. Make icing: Whisk sugar, milk and vanilla together. Drizzle icing onto cooled cookies. Sprinkle each with a pinch of cinnamon.
