Chocolate truffles add sweet note to the day

There are a few holidays I wish we could skip, but because classrooms like to celebrate and kids hear things from friends and media, it doesn’t always feel like an option.

I’m not exactly the Scrooge of Valentine’s Day, but it seems like a silly concept to choose a day to tell the people that we love them because of a date on the calendar. Even stranger to commemorat­e that with an expensive gift or greeting card.

But then again, who doesn’t like to be told that they are special and cared for? And there probably are a few folks who need a reminder that it’s nice to express these sentiments from time to time. So, I’ll play along every February 14th.

But I will also try to make small gestures throughout the year, letting friends and family I cherish know that I think about them and that their presence in my life is important. Whether it’s a handwritte­n letter, a phone call for no obvious reason or taking someone a care package if they are injured, in the long run that means more than a handful of candy hearts on a certain day of the year.

For Valentine’s Day, we make cards and a few small treats for friends, teachers and family to express our love and appreciati­on. Here’s a recipe for a small sweet that can be packaged up.

These little truffles are fun for children to help roll out and dip. They are primarily chocolate, but they include a whisper of peanut butter and the texture of caramel, all brightened with a hit of salt. Who doesn’t love that?

I was looking for a truffle that wasn’t pure chocolate, and this one fit the bill with a bit of peanut butter and caramel too. It originated (sans peanut butter) with donnahay.com and I found it at halfbakedh­arvest.com.

While the truffles aren’t difficult, it does take time to cool down the ganache and firm up the truffles, as well as some hands-on time rolling and dipping.
