Honey Glazed Mint Carrots
1 package (8 ounces) baby carrots
1⁄2 to 1 cup water (depends on size of pan)
2 tablespoons honey
3 tablespoons butter
Finely chopped fresh mint to taste
Place carrots in a saucepan and cover with water and the honey to about 1⁄2 inch over the top.
Partially cover and boil carrots over medium heat until most of the water is gone, 6 to 8 minutes. Add butter, cover and cook another 6 minutes or so until you have a nice glaze. Sprinkle on fresh mint.
