Nearly 70 new food offerings, some on a stick, at 2021 Wisconsin State Fair

The menu for the 2021 Wisconsin State Fair will have what could be a record number of great flavors that may — or may not — go great together.

The fair announced that there’ll be nearly 70 new food items at the 2021 Wisconsin State Fair, which runs Aug. 515 at State Fair Park in West Allis.

The unlikely new food combinatio­ns range from cruller-crusted chicken (on a sandwich or in chicken sticks) to pizza poutine waffle fries.

And there’s no shortage of wildlife among the fair’s new food offerings, from Lobster Rangoon to the Yak-Mac Attack Burger, a hamburger made with yak meat topped with macaroni and cheese. There’s even a Deep-Fried Pink Squirrel (not really a squirrel; it’s deepfried pink squirrel vanilla ice cream drink cake).

New foods-on-a-stick? C’mon, the State Fair. Of course there are.

This year, there are at least eight new foods-on-a-stick, and the combinatio­ns

it’s are, well, a little unexpected.

Buttery Prime Rib Jerky On-aStick (buttery prime rib in jerky form served on a stick)

Country-Fried Steak On-a-Stick (fried 2-ounce cube steak, served with homemade white gravy)

Gator Claw On-a-Stick (grilled alligator arm served on a stick with Cajun ranch sauce)

Jalapeño Bratwurst On-a-Stick Peanut Butter Squealer (maple-infused breakfast sausage baked inside a Belgian waffle, smothered in peanut butter, topped with real bacon and served on a stick)

Peppadew Olives On-a-Stick (deep-fried green queen olives stuffed with fresh garlic in a Peppadew pepper)

Polish Puppies On-a-Stick (deepfried hush puppies stuffed with Klement’s Jalapeño Polish, sautéed onions, sauerkraut, cheddar cheese; served with buttermilk chive dipping sauce)

Triple C Cookie Dough On-a-Stick (chocolate cookie dough loaded with chocolate chips served on-a-stick)

And some of the new items appear to be a full menu all their own. Take the Chicken Bacon Ranch Cheese Curd Taco; it’s a fried tortilla shell filled with grilled chicken, bacon, ranch-flavored cheese curds, topped with fresh cut iceberg lettuce, ranch dressing. Or the Glazy Boy, two grilled Grebe’s glazed doughnuts, pressed with two slices of BelGioioso Fontina cheese, brined and slow-smoked pork loin, raspberry whole grain mustard and pickled jalapeños.

And then there’s the Deep-Fried Wisconsin Fish Fry, basically a whole fish fry dinner rolled together and deepfried.

Eight of this year’s new food offerings, including the Deep-Fried Wisconsin Fish Fry and the Gator Claw On-aStick, are finalists for the 2021 Sporkies, State Fair’s annual food competitio­n.
