Downtown ‘ghost kitchen’ Paper Table adds Wingstop to lineup plans
Downtown Milwaukee’s new “ghost kitchen” has landed a Wingstop, with plans for a Sept. 15 opening.
It is one of four restaurants that so far have occupancy permit applications pending for the ghost kitchen, known as Paper Table Food Co., 733 N. Milwaukee St.
Wingstop is the first national chain to surface at Paper Table, which plans for up to 18 separate restaurant stalls that focus on deliveries and carryouts.
Wingstop will be open from 10 a.m. to midnight, seven days a week, according to the permit application filed with the city Department of Neighborhood Services.
It is to open on or around Sept. 15, said Laura Menk, a marketing specialist with ARS Brands, a Wingstop franchisee.
ARS Brands operates eight Wingstops in the Milwaukee area, including one that opened Friday at 116 E. Sunset Drive, Waukesha, Menk told the Milwaukee Journal Sentinel.
Paper Table’s other named tenants are all local operations.
They are Freshwerks, which its Facebook page describes as a mobile food vendor; MilTex Kitchen, a food truck that includes burgers, catfish and meatloaf on its menu, and Blac Bistro, which will provide Italian and Creole items as well as breakfast items such as breakfast skillets, omelets and breakfast tacos.
Blac Bistro is planning a July 19 soft opening, said owner Albert Burrus. The other restaurants’ planned opening dates weren’t immediately available.
Paper Table’s plans include limited dining space.
But its focus will be on deliveries and carry-outs, with building permits referring to the development as both a “ghost kitchen” and a “cloud kitchen” — restaurants without dining rooms.
Paper Table’s operator, KBD Holdings LLC, is based in the Los Angelesarea and has created similar ghost kitchens in San Francisco, Denver, Houston and other cities.
KBD Holdings has declined to respond to inquiries about Paper Table.
The company is associated with Los Angeles-based City Storage Systems LLC, which is operated by Travis Kalanick, Uber Technologies Inc.’s cofounder and former chief executive officer.
