William Horowitz is the chef and co-owner with his sister Julie Horowitz of Harry & Ida’s Luncheonet­te in Tribeca; as well as Ducks Eatery and Harry & Ida’s Meat and Supply Co., both in the East Village KITCHEN CRED:

Ducks Eatery has been crowned Brisket King of NYC. The siblings have been featured frequently on the Food Network, PBS, Vice, Travel Channel & Discovery Channel for their cooking and focus on preserving old world traditions and bringing them to the forefront of a new generation. FAVE FALL DISH TO MAKE AT HOME:

Freshly made Cacio e Pepe (long pasta with black pepper) with hard-shell clams and a side of roasted “chestnut” squash, maitake mushrooms and seaweed butter. The greatest part of my fall is hunting for wild maitake mushrooms—foraging is one of my biggest passions! ADVICE FOR THOSE WHO SAY THEY CAN’T COOK:

Remember, real chefs make bad food all the time—they just don’t serve it to you. Also, don’t go crazy with following recipes, they’re just other people’s opinions. WHEN I’M NOT COOKING, I’M:

Foraging, fishing, backcountr­y skiing and playing ping pong. 5 TOOLS EVERY COOK SHOULD HAVE IN THEIR KITCHEN:

A really great chef’s knife and kitchen shears, sharpening stones, tasting spoon and a really good bottle of mezcal. SNACK I CAN’T LIVE WITHOUT:

Late night taco trucks...they will be the death of me. BEST DISH I’VE EVER EATEN:

Family clam bake! We do it once a year and start with a big fire by the beach with bucket fulls of clams, steamers, lobsters, seaweed, potatoes and smoked chicken or duck. My family has been doing it for half a century and it’s our favorite meal of the year. FAVORITE NYC RESTAURANT THAT’S NOT MY OWN:
