Great! Dane footprint growing in Brooklyn
A Nordic restaurant empire is growing in Brooklyn.
Claus Meyer, known as the father of the New Nordic Cuisine movement and the co-founder of Noma, Copenhagen’s world-famous restaurant, is one of the investors in a new Brooklyn eatery.
The new restaurant — from talented chef/owner Mads Refslund — will be in Williamsburg, at 93-99 N. 10th St. and will open by spring, Side Dish has learned.
The 4,000-square-foot space will seat 40 people in the dining room plus 40 at the bar. Refslund worked as a chef at Acme in NoHo and was the co-founding chef at Noma, which won “best restaurant in the world” title on four separate occasions — and was where he met Meyer.
American restaurateur/culinary en- trepreneur Danny Meyer is an investor in West Coastbased Tender Greens, which is gearing up to open its first New York location in the Flatiron District this winter.
The fast-casual “farm to fork” healthy eatery, helmed by a chef with fine-dining experience, is slated to open at 900 Broadway, in the former Craftbar space, two blocks north of the Union Square Greenmarket, this February, Side Dish has learned exclusively.
