‘Aby’ road for chef Joël

Legendary chef Joël Robuchon’s Midtown comeback is shaping up — five years after he shuttered his esteemed eatery at the Four Seasons Hotel on East 57th Street.

At 73, Robuchon — who has more Michelin stars than any other chef — is six to eight months from opening a twostory emporium at developer Aby Rosen’s luxury condo tower at 100 E. 53rd St., sources told Side Dish.

Rosen also owns the landmarked Seagram Building, which formerly housed the Four Seasons Restaurant and now boasts Major Food Group restaurant­s including The Grill.

Robuchon’s installati­on will feature a ground-floor marketplac­e with sushi, informal dining and healthy options like juices, along with a formal dining space on the second floor.

Robuchon recently dropped 60 pounds by ditching butter, oil, sugar, and most bread. He also cut out much of his red meat intake and he is intent on translatin­g his healthy choices into options for his diners as well.

Greenpoint, which is becoming one of Brooklyn’s most enticing neighborho­ods, is getting a taste of Palm Springs this week.

A new bar, The Springs, is slated to open with cocktails from co-owner/mixologist/ photograph­er Sarah Boisjoli, who was inspired by the 1950s era of the California desert resort. The bar also will feature small bites and snacks from a retro food truck parked outside.

Juice-coffee bars continue to mushroom across the city.

The latest is NEO Cafe, which is opening in the NEO U fitness center at 420 Fifth Ave.

The subterrane­an space’s offerings include matcha lattes, and turmeric and activated charcoal lattes.
