Gua­camole was stored un­der bags of raw meat; ready-to-eat foods must be stored above raw meat to pre­vent ac­ci­den­tal con­tam­i­na­tion. Buck­ets of bleach did not have a la­bel; chem­i­cals added to work­ing buck­ets must have a com­mon name la­bel.

Non­crit­i­cal vi­o­la­tions: There were chicken legs in the sink, chicken breasts in a con­tainer with ice, and tripe was thaw­ing in a box on the floor; time and tem­per­a­ture con­trolled for safety foods must be thawed us­ing ap­proved meth­ods such as run­ning un­der wa­ter, in the walk-in cooler, dur­ing the cook­ing process or in a mi­crowave. Walls have food splat­ter on them; walls must be cleaned with a fre­quency to pre­vent buildup.

Dick­son St., Fayet­teville Crit­i­cal vi­o­la­tions: Cae­sar dress­ing was at 47 de­grees and then rapid chilled be­fore serv­ing to fix it; po­ten­tially haz­ardous foods must be 41 de­grees or be­low. Or­ange cleaner did not have a la­bel on the bot­tle; chem­i­cals not in the orig­i­nal con­tainer must have a la­bel.

Non­crit­i­cal vi­o­la­tions: Nuts, sea­son­ing and other items were in a bot­tle that did not have a la­bel; prod­ucts not in orig­i­nal pack­age must have a la­bel. Spices and co­coa pow­der were not cov­ered; foods must be cov­ered to pre­vent ac­ci­den­tal con­tam­i­na­tion. Pep­pers and other items were stored in sin­gle-use con­tain­ers; sin­gle-use con­tain­ers must not be used. Spat­ula han­dles are burned and no longer smooth; non­food con­tact sur­faces must be smooth and eas­ily clean­able. Food fil­ter in the cook sta­tion is dam­aged and the hood fil­ter above the grill has a gap; hood fil­ters must not have a gap.
