Critical violations: Hand washing sink had gloves, a water bottle and a green scrubber in it; hand washing sink must be clear of objects and not used for anything other than hand washing. Guacamole was stored under bags of raw meat; ready-to-eat foods must be stored above raw meat to prevent accidental contaminat­ion. Buckets of bleach did not have a label; chemicals added to working buckets must have a common name label.

Noncritica­l violations: There were chicken legs in the sink, chicken breasts in a container with ice, and tripe was thawing in a box on the floor; time and temperatur­e controlled for safety foods must be thawed using approved methods such as running under water, in the walk-in cooler, during the cooking process or in a microwave. Walls have food splatter on them; walls must be cleaned with a frequency to prevent buildup.

Spices and cocoa powder were not covered; foods must be covered to prevent accidental contaminat­ion. Peppers and other items were stored in single-use containers; single-use containers must not be used. Spatula handles are burned and no longer smooth; nonfood contact surfaces must be smooth and easily cleanable. Food filter in the cook station is damaged and the hood filter above the grill has a gap; hood filters must not have a gap.
