Sandwich winner gets $25,000 prize

When is a sandwich worth $25,000?

When it wins first place in a national recipe contest.

Tiffany Aaron of Quitman was named the grand prize winner of America’s Better Sandwich Contest, sponsored by Arnold, Brownberry and Oroweat Bread.

Aaron’s recipe competed among more than 5,000 entries to take the top prize.

Her creation layers sweet potatoes, smoked turkey and an orange-dressed watercress salad on 12-grain bread for a healthful and flavorful sandwich.

Orange Kissed Turkey, Sweet Potato and Watercress Salad Sammie

2 tablespoon­s coconut oil 1 large sweet potato, sliced

into ¼-inch rounds Kosher salt, to taste 2 tablespoon­s orange juice 2 teaspoons raw honey 1 teaspoon olive oil

1 ounce watercress (about 1

cup packed )

4 slices Oroweat Whole Grains

12-Grain bread

¼ cup Dijon-style mustard 4 ounces thinly sliced smoked turkey breast

¼ cup chopped walnuts

Heat coconut oil in large skillet over medium-low heat. Place sweet potatoes in hot oil and sprinkle with kosher salt. Cook for 3 minutes on each side or until tender.

In a small bowl, whisk together orange juice, honey and olive oil. Add watercress and toss until well coated.

To assemble, spread one side of each slice of bread with Dijon mustard. Place half of turkey on one slice of bread. Top with half of the sweet potatoes, half of the watercress mixture and half of the chopped walnuts. Top with another slice of bread, mustard side down. Repeat with remaining ingredient­s to make second sandwich.

Makes 2 sandwiches.
