Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

1402 S.E. Shane Lane, Bentonville Follow-up inspection. Critical violations: Person in charge at facility was allowing food to be kept at a temperatures where rapid bacterial growth can occur, critical violations to exist in facility and did not demonstrate knowledge of food safety by appropriate responses and actions. Arroz blanco was at 48 degrees, carne molida was at 47 degrees and frijoles were at 48 degrees in cold holding; other items were at improper temperatures in cold holding. Walk-in cooler was not keeping food at 41 degrees or below.

Noncritical violations: Vents in food preparation areas need to be repaired or replaced.
